Today I am excited to announce a new blog series in which I will be sharing with you over the next few weeks my favourite, easy breakfast recipes. Each recipe can be made for breakfast (or lunch) in under 10 minutes. I love simple, healthy vegetarian recipes as I eat a mostly plant based diet - of course feel free to adapt any of these recipes as you like.
Avocado toast is a go to recipe of mine for any time of the day. As my schedule can be pretty hectic with yoga teaching sometimes I find myself eating at odd times of the day. Having an avocado on hand can save me from grabbing an unhealthy snack. Avocados are such a great fruit as they are full of healthy fats which not only keep you full for longer but have a ton of health benefits.
Easy Breakfast Recipe - Avocado Toast Ingredients
- 1/2 avocado
- 2 slices of your choice of bread - I used wholemeal
- 5 cherry tomatoes
- Black pepper to taste
Place the bread in the toaster to toast. While the bread is toasting mash up the avocado with a fork.
Once the bread is toasted place onto a plate and spread the avocado evenly. Add the sliced cherry tomatoes and add black pepper to taste (I like a lot!).
