So life lately has kind of run away with me and I have not written a blog post in over a week! Crazy how life gets in the way right? Especially at this time of the year.
If you follow me on snapchat (@jaynebecca), you will know that I went to London this weekend. We went to watch Above and Beyond who are a super creative English progressive trance group. If you don't think that you are into trance/ dance then give their acoustic album a listen. You might surprise yourself, I know I did! The event was held at Wembley arena and it was magical. All of the profits from the event are going to be donated to the 'Little Something' fund in memory of Jono's sister Charlotte. We spent the next day dodging the rain and running from shop to shop along Oxford Street, which was so busy! Like crazy busy. I do love London to visit and I like the quiet spaces but I'm not all that keen on all the people... especially the men who seem to have forgotten their manners! I was hoping to pick up some Christmas gifts but I only seemed to find things for myself. Haha! Always the way. I picked up a few things from Victoria's Secret including the super cute sports bra below and the Coconut Passion body mist which smells amazing! Although coconut is a usually a summer scent this is such a warm scent, more like a coconut vanilla which I think is perfect for Autumn/ Winter.
Feeling Sorry for Myself
I suffered from a 12 hour migraine from Monday evening through to Tuesday morning and spent the rest of Tuesday recovering. If you suffer from migraines you know just how much they can take out of you. Thankfully I was okay to teach my Tuesday yoga and class and felt back to normal on Wednesday! Vegan Chocolate Chip Banana Bread
So yesterday I finally got around to making a batch of vegan chocolate chip banana bread and it is seriously good! The recipe I used was Rachel Brathen's from her blog. I always do love her recipes because they are pretty easy to follow and always taste amazing. This is my adaptation...
- 4 large overripe bananas
- 1 3/4 cup spelt flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/3 cup melted coconut oil
- 1 teaspoon vanilla
- 1/3 cup brown sugar
- 1/2 cup vegan chocolate chips
- 1 tbsp chia seeds
- 1 tbsp pecans
- 1 teaspoon cacao nibs
Heat the oven to 175C. Mix the flour, baking powder, baking soda, brown sugar and chia seeds. Put aside. Mash the bananas in a separate bowl together with the coconut oil and vanilla. Mix the dry and wet mixtures together and when blended well, fold in the chocolate chips. Grease a loaf pan with coconut oil and pour in the batter. On top, sprinkle pecans and cacao nibs before putting it in the oven for 45 minutes – more or less! My oven is a fan oven and the banana bread was baked perfectly in 35 minutes. Use a toothpick to check – when it comes out fairly clean it’s ready. Let cool on a wire rack. Serve with a cup of hot tea for an afternoon pick me up. Enjoy!
On a side note I have been devouring books like they are going out of season. I whipped through You are Never Weird on the Internet (Almost) in a weekend and if you are into thrillers, I highly recommend You - I read that in less than a week! My parents are coming to visit this weekend, well, actually they arrive today so I better get the house looking better! So I am looking forward to seeing them. I don't get to see my family as often as I would like as we live a 6 hour drive away. I'm also getting excited for my Rise + Shine Yoga and Plant Based Picnic morning a week on Saturday, we have a couple of spaces left so please do book if you are in Bristol and fancy a morning dedicated to you before the festive season takes us all!
