Today I slept in a little, which was much needed after teaching three yoga classes yesterday, then made myself a delicious and wholesome breakfast. Perfect for grey days like today. Along with my coffee and a good book it made for a perfect start to my day. I'm going to roll out my mat right after posting this recipe to sweat, flow and dance my way through a self practice, then onto teaching my Tuesday evening yoga class tonight. All in all a great day I think!
Vegan Coconut Oatmeal
- 1/2 cup of oatmeal
- 1/2 cup of unsweetened almond milk
- 1/3 cup of unsweetened shredded coconut
- 1/3 cup of water
Put the oatmeal, coconut and almond milk in a pan on medium heat. Stir well. Once the mixture starts to bubble a little add the water. Let your oatmeal simmer until it is thick and creamy (usually 5-10 minutes). Keep an eye on it so it doesn't stick to the pan. In the meantime whip up some blueberry chia jam!
Blueberry Chia Jam
- Large handful of blueberries
- 1-2 tbsp of chia seeds
Put the blueberries into a mortar using the pestle crush them into a jam-like constancy. Add the chia seeds, I usually 'eye ball' measure it until it looks about right. Mix together.
Once your oatmal is ready pour into a bowl and top with the jam. You can add a little extra almond milk if you like! I also sprinkled some cacao nibs on the top. Serve with a good cup of coffee or hot tea and a good book! Enjoy!
