I'm still on a yoga high after last nights Strala Yoga launch class in Bristol - 22 yogis and me, moving flowing, breathing and being! Such bliss! I made a batch of coconut and cacao energy balls as snacks for after class. As luck would have it I made just enough to go around. The recipe was requested in class and on Instagram so here we go. I must confess that I didn't really measure anything so these are approximate amounts.
Coconut and Cacao Energy Balls - Ingredients
- 2 cups of medjool dates
- 1/2 cup of almonds
- 1/3 cup of pecans or any other nut
- 1 heaped tablespoon of raw cacao powder
- 2 tablespoons of melted coconut oil
- 1 tablespoon of ground hemp seeds
- Dessicated coconut
Start by placing the almonds, pecans and ground hemp in your food processor or blender. Blend for about 1 minute, until the nuts have crumbled. Add the remaining ingredients (apart from the coconut), pitting the dates if needed. Blend for another minute or two until a sticky dough forms.
Use your hands to roll the mixture into little balls this mixture should make about 24 balls. Roll balls in the dessicated coconut and place on a plate. Store in the fridge to firm up for about an hour.

Just as you would eat chocolate in moderation make sure you eat these in moderation as well ;)
